  1. 1

    Prepare the Ingredients

Remove stem, seeds, and ribs, and cut both bell peppers into 1/2" dice.

Trim and thinly slice green onions, keeping white and green portions separate.

    Mince garlic.

Remove Italian sausage from casing, if necessary.

  2. 2

    Cook the Sausage and Peppers

Place a large pot over medium-high heat and add 1 tsp. olive oil.

Add Italian sausage and bell peppers to hot pot. Break up sausage into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

Carefully drain any excess liquid from pot.

  3. 3

    Add the Broth

Add white portions of green onions and garlic to hot pot. Stir occasionally until fragrant, 1-2 minutes.

Add flour and stir until no dry flour remains.

Add 3 cups water, chicken base, 1/4 tsp. pepper, and a pinch of salt. Stir to combine and bring to a simmer.

  4. 4

    Add the Cheese

Once simmering, stir occasionally until vegetables are tender, 4-6 minutes.

Add cream base and half the cheese (reserve remaining for garnish). Stir occasionally until melted and combined, 1-2 minutes.

    Remove from burner.

    While soup cooks, continue recipe.

  5. 5

    Crisp Bacon and Finish Dish

Line a microwave-safe plate with a paper towel. Add bacon to towel-lined plate.

    Microwave until crispy, 30-60 seconds.

    Carefully remove from microwave.

Plate dish as pictured on front of card, topping soup with crispy bacon, remaining cheese, and green portions of green onions. Bon appétit!
