  1. 1

Start Potatoes and Prepare Green Onions

Halve potatoes lengthwise. Place potatoes on a microwave-safe plate. Microwave until softened, 6-7 minutes.

    Carefully remove from microwave.

While potatoes microwave, trim and thinly slice green onions on an angle, keeping white and green portions separate.

  2. 2

    Make the Filling

Carefully scoop out potato insides, keeping the skins intact. Be careful! Potatoes will be hot!

In a mixing bowl, combine potato insides, white portions of green onions, garlic salt, butter, half the cheese (reserve remaining for topping), and half the sour cream (reserve remaining for garnish).

Place potato skins on prepared baking sheet and season with 1/4 tsp. salt.

  3. 3

    Finish Potatoes and Finish Dish

Transfer filling into potato skins. Top with bacon and remaining cheese.

Roast in hot oven until cheese melts and bacon crisps, 10-15 minutes.

    Carefully remove from oven.

Plate dish as pictured on front of card, topping potatoes with green portions of green onions and remaining sour cream. Bon appétit!
