Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Roast the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries on one prepared baking sheet and toss with 4 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer.Roast in hot oven until lightly browned, 25-30 minutes, tossing once halfway through.Carefully remove from oven.Top with black garlic seasoning and gently toss to coat. Sheet will be hot! Use a utensil.While fries roast, continue recipe. -
Roast the Salmon
Pat salmon dry and season flesh side with a pinch of salt and pepper.
Place salmon, skin-side down, on second prepared baking sheet. Roast in hot oven until salmon reaches a minimum internal temperature of 145 degrees, 10-15 minutes.Let salmon cool, 5 minutes.Transfer to a plate. Replace foil and reserve baking sheet.While salmon roasts, trim and thinly slice green onions on an angle, keeping white and green portions separate. -
Form the Patties
Once cool enough to handle, carefully peel salmon skin away from flesh and discard. Place salmon in a mixing bowl and shred into small pieces.
Add panko, white portions of green onions, creme fraiche, umami seasoning, and a pinch of salt to bowl with salmon. Stir mixture until it becomes slightly sticky. Form mixture into 2 equally-sized patties, about 5" in diameter. -
Cook Patties and Toast Buns
Place patties on one side of reserved baking sheet. Toast in hot oven until lightly browned, 8-12 minutes.
Carefully remove from oven.Add buns, cut-side down, to empty side of baking sheet. Bake in hot oven until buns are golden-brown and patties are heated through, 3-5 minutes.Carefully remove from oven.While patties roast and buns toast, continue recipe. -
Make Slaw and Finish Dish
In another mixing bowl, combine cabbage, green portions of green onions, and BBQ sauce. Set aside.
Plate dish as pictured on front of card, topping bottom bun with patty, slaw, and top bun. Bon appétit!
