Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Prepare the Ingredients
Cut mushrooms into 1/4" slices.
Trim and thinly slice green onions on an angle, keeping white and green portions separate.Remove Italian sausage from casing, if necessary. -
Cook the Sausage and Mushrooms
Place a large pot over medium-high heat and add 1 tsp. olive oil.
Add Italian sausage, mushrooms, and white portions of green onions to hot pot.Break sausage into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes. -
Start the Risotto
Add rice to hot pot. Stir occasionally until opaque, 1-2 minutes.
Add 2 cups boiling water from small pot, mushroom seasoning, peas, and demi-glace. Rice should just be covered by water.Stir occasionally until nearly all water is absorbed. -
Finish the Risotto
Add 1 cup boiling water from small pot and stir often again until nearly all water is absorbed. Repeat this process, stirring occasionally, 15 minutes.
Taste risotto as you cook, checking for tenderness. When rice has no more “bite” or crunch, it's done. There may be water left.Remove from burner. Stir in garlic salt, softened cream cheese, and a pinch of salt and pepper until combined and creamy. -
Finish the Dish
Plate dish as pictured on front of card, garnishing risotto with goat cheese (crumbling if needed) and green portions of green onions. Bon appétit!
