Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

Start the Rice and Meatballs
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided trays with cooking spray.
In one tray, combine rice, 2 cups water, adobo seasoning, and chicken base. Cover with foil.In a mixing bowl, combine ground pork, ginger, and half the soy sauce (reserve remaining for sauce). Form into 12 evenly-sized meatballs. Place meatballs in second provided tray, side by side in an even layer. Top with 1 tsp. olive oil. -
Add the Peas and Sauce
Bake both trays (rice covered, meatballs uncovered) in hot oven, 15 minutes.
While rice and meatballs cook, in another mixing bowl, combine vinegar, BBQ sauce, remaining soy sauce, and pineapples and their juice.Carefully remove both trays from oven. Drain excess liquid from meatball tray, if necessary. Tray will be hot! Use a utensil.Uncover rice and stir in peas. Cover with foil. Top meatballs with sauce. -
Bake the Meal
Bake again (rice covered, meatballs uncovered] in hot oven until rice is tender and meatballs reach a minimum internal temperature of 160 degrees, 8-12 minutes.
Carefully remove both trays from oven.To serve, top rice with meatballs and sauce. Bon appétit!
