1 Microwave Instructions
Thoroughly rinse any fresh produce and pat dry. Drain shrimp thoroughly and pat dry.
In a mixing bowl, combine slaw mix and dressing.In provided tray, combine pepper and onion mix, 2 tsp. olive oil, and a pinch of salt and pepper.Cover tray with a damp paper towel. Microwave covered until vegetables start to soften, 2-3 minutes.Carefully remove tray from microwave. Stir in shrimp, enchilada sauce, corn, chipotle seasoning (use less if spice-averse), honey, and a pinch of salt and pepper.Cover with a damp paper towel. Microwave again covered until shrimp are heated through, 2-3 minutes.Carefully remove tray from microwave.Wrap tortillas in a damp paper towel and microwave until warmed, 30-60 seconds.If tortillas come folded, keep folded.Carefully remove tortillas from microwave.To serve, fill tortillas with shrimp mixture and top with slaw. 2 Oven intructions
Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Make sure to use conventional oven setting, not convection. Thoroughly rinse any fresh produce and pat dry. Drain shrimp thoroughly and pat dry.

Bake covered in hot oven until vegetables start to soften, 8-10 minutes.Carefully remove tray from oven. Stir in shrimp, enchilada sauce, corn, chipotle seasoning (use less if spice-averse), honey, and a pinch of salt and pepper.Cover tray with foil. Place tray on a baking sheet. Bake again covered in hot oven until shrimp are heated through, 10-12 minutes.While meal bakes, wrap tortillas in a damp paper towel and microwave until warmed, 30-60 seconds.If tortillas come folded, keep folded.Carefully remove tray from oven and tortillas from microwave.To serve, fill tortillas with shrimp mixture and top with slaw.
