Prepare the Meatloaves and Mashed Potatoes
Combine ground beef, panko, ricotta, garlic salt, a pinch of salt, and 1/4 tsp. pepper in a mixing bowl. Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place in one provided tray.
Add mashed potatoes to second provided tray. If you receive mashed sweet potatoes instead, no worries! Follow same instructions.Stir vigorously to combine, then spread into an even layer. -
Add the Sauce and Peas
Bake both trays uncovered in hot oven until meatloaves begin to brown and mashed potatoes are heated through, 8-12 minutes.
Meatloaves will finish cooking in a later step. While mashed potatoes and meatloaves bake, combine ketchup, brown sugar, and a pinch of salt in another mixing bowl. Set aside.Carefully remove both trays from oven. Top meatloaves evenly with ketchup-brown sugar mixture.Vigorously stir shredded cheese (if desired) and a pinch of salt and pepper into mashed potatoes until cheese is melted and combined. Push potatoes to one side of tray.Add peas to now-empty side of tray and top with 1/4 tsp. salt and a pinch of pepper. Trays will be hot! Use a utensil. Cover vegetables tray with foil. -
Bake the Meal
Bake both trays (meatloaves uncovered, vegetables covered) in hot oven until vegetables are heated through and meatloaves reach a minimum internal temperature of 160 degrees, 8-12 minutes.
Carefully remove both trays from oven.To serve, stir softened butter into peas. Bon appétit!
