To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |

Customize It Instructions

  • If using ground beef, add meatballs to hot pan and cook until beef reaches minimum internal temperature, 10-12 minutes.

  • If using ground pork, add meatballs to hot pan and cook until pork reaches minimum internal temperature, 10-15 minutes.

  • If using Impossible burger, add meatballs to hot pan and cook until Impossible burger reaches a minimum internal temperature of 160 degrees, 12-15 minutes.

  1. 1

    Start the Cauliflower Mash

    Coarsely chop garlic.

Bring a medium pot with cauliflower and garlic covered by water to a simmer.

Once simmering, stir occasionally until tender, 12-15 minutes.

Remove from burner. Drain cauliflower and garlic in a colander. Don't rush draining the cauliflower and garlic; try to remove as much excess water as possible!

Return cauliflower and garlic to pot, cover, and set aside.

While cauliflower and garlic cook, continue recipe.

  2. 2

    Form the Meatballs

Thoroughly combine ground turkey, garlic salt, mayonnaise, and a pinch of pepper in a mixing bowl. Form mixture into 8 equally-sized meatballs.

  3. 3

    Cook the Meatballs

Place a large non-stick pan over medium heat and add 2 tsp. olive oil.

Add meatballs to hot pan. Cover and roll occasionally until browned all over and turkey reaches a minimum internal temperature of 165 degrees, 11-13 minutes.

Transfer meatballs to a plate. Keep pan over medium heat; no need to wipe clean.

  4. 4

    Make the Sauce

Add 1/2 cup water, softened cream cheese, and half the umami seasoning (reserve remaining to add to taste) to hot pan and bring to a simmer.

Once simmering, reduce heat to low and stir occasionally until melted and combined, 1-2 minutes.

Add meatballs and bring to a simmer again.

Once simmering, stir occasionally until sauce has slightly thickened and meatballs are coated, 3-5 minutes.

Remove from burner. Taste sauce; add remaining umami seasoning, if desired.

  5. 5

Finish Cauliflower Mash and Finish Dish

Return pot with drained cauliflower and garlic to low heat. Mash until smooth and warmed through, 1-2 minutes.

Stir peas, 1/4 tsp. salt, half the shredded cheese (reserve remaining for garnish), and butter into hot pot until melted and combined, 1-2 minutes.

    Remove from burner.

Plate dish as pictured on front of card, topping cauliflower mash with meatballs and sauce and garnishing with remaining shredded cheese. Bon appétit!
