If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

Prepare the Carrots
Place carrots in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until beginning to soften, 3-5 minutes.
Carefully remove from microwave.In one provided tray, combine carrots, garlic salt, a pinch of pepper, and 2 tsp. olive oil. Spread into an even layer. Carrots will be hot! Use a utensil. -
Prepare the Chicken
Pat chicken dry and season both sides with poultry seasoning.
Place chicken in second provided tray. -
Bake Meal and Heat Potatoes
Bake both trays uncovered in hot oven until carrots are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.
While meal bakes, add mashed potatoes, cream cheese, and a pinch of salt to another microwave-safe bowl. Vigorously stir to combine. Cream cheese will melt as potatoes heat. Microwave uncovered until cream cheese melts and potatoes are heated through, 2-3 minutes.Carefully remove from microwave. Vigorously stir to combine.Carefully remove trays from oven. Stir honey and lemon juice into carrots until evenly coated.To serve, top chicken evenly with butter. Bon appétit!
