Cooking Guidelines

Prepare Ingredients and Make Cheese Filling
Peel and cut sweet potato into 1/2" dice.
Trim and thinly slice green onions, keeping white and green portions separate.Mince garlic.Combine softened cream cheese, softened cheese spread, and white portions of green onions in a mixing bowl. Set aside. -
Start the Sweet Potatoes
Place sweet potatoes on one prepared baking sheet and toss with 1 Tbsp. olive oil, half the onion salt (reserve remaining for chicken), and 1/4 tsp. pepper. Spread into a single layer.
Roast in hot oven, 15 minutes.While sweet potatoes roast, continue recipe. -
Stuff the Chicken
Pat chicken dry and season both sides with remaining onion salt.
Place chicken on a clean cutting board. Hold knife blade parallel to the board and carefully make a lengthwise cut through the center of the meat, using your free hand to steady meat. Stop short of opposite edge of chicken so it remains in one piece. Open meat as you would a book.Divide cheese filling evenly between chicken breasts, placing in center. Fold chicken in half over cheese filling, pressing gently to adhere. -
Coat the Sweet Potatoes and Chicken
Combine cornstarch and 1 Tbsp. water in another mixing bowl. Set aside.
Evenly spread panko on a plate.Brush cornstarch mixture on one side of chicken. Transfer chicken, cornstarch mixture-side down, onto plate with panko, pressing gently to adhere.After 15 minutes, carefully remove baking sheet from oven. Gently stir pesto and garlic into sweet potatoes until evenly coated. Sweet potatoes and baking sheet will be hot! Use a utensil.Place chicken, panko-side up, on second prepared baking sheet. Evenly top with 2 tsp. olive oil. -
Finish Sweet Potatoes and Chicken and Finish Dish
Roast both sheets in hot oven until sweet potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 13-15 minutes.
Carefully remove from oven.Plate dish as pictured on front of card, garnishing sweet potatoes with green portions of green onions. Bon appétit!
