1 Start the Green Beans
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Break green beans in half. Combine green beans, 1 Tbsp. water, 2 tsp. olive oil, 1/4 tsp. salt, and half the garlic pepper (reserve remaining for meatballs) in provided tray. Spread into a single layer.Bake uncovered in hot oven, 10 minutes.While green beans bake, continue recipe. -
2 Add the Meatballs
Prick tomatoes all over with a fork.
Combine ground turkey, panko, remaining garlic pepper, and 1/2 tsp. salt in a mixing bowl. Form mixture into eight equally-sized meatballs.Carefully remove green beans from oven. Add tomatoes and stir to combine. Push vegetables to one side of tray. Place meatballs in now-empty side of tray. Tray will be hot! Use a utensil. -
3 Make Crema and Bake Meal
Bake uncovered in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 165 degrees, 20-25 minutes.
In another mixing bowl, combine sour cream and pesto. Set aside.Carefully remove tray from oven.To serve, top meatballs with crema and cheese. Stir lemon juice into vegetables and garnish with crispy red peppers. Bon appétit!
