Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground beef, roast until meatballs reach minimum internal temperature, 17-20 minutes.

Prepare the Ingredients
Mince chives.
Coarsely chop cauliflower.Place cauliflower in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until very tender, 5-7 minutes.Don't worry about overcooking! The softer the cauliflower, the better.Carefully remove from microwave.While cauliflower heats, continue recipe. -
Form the Meatballs
In a mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.
After 1 minute, add ground pork and half the onion salt (reserve remaining for cauliflower). Form pork mixture into eight equally-sized meatballs. -
Roast the Meatballs
Place meatballs on prepared baking sheet.
Roast in hot oven until pork reaches a minimum internal temperature of 160 degrees, 25-30 minutes. While meatballs roast, continue recipe. -
Make the Mashed Cauliflower
Add cauliflower, half the cream base (reserve remaining for sauce), and remaining onion salt to the bowl of a food processor. Cauliflower will be hot! Use caution.
Process mixture until smooth, 60-90 seconds.If you don't have a food processor, mash cauliflower mixture with a potato masher until desired consistency is reached. -
Make Sauce and Finish Dish
In another microwave-safe bowl, combine mustard and remaining cream base. Cover with a damp paper towel.
Microwave covered until heated through, 45-60 seconds.Carefully remove from microwave. Stir cheese into sauce until melted and combined.Plate dish as pictured on front of card, topping mashed cauliflower with chives and garnishing meatballs with sauce. Bon appétit!
