If using antibiotic free chicken breasts, pat dry. Cook n a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

Prepare the Green Beans
Trim green beans, if necessary.
Combine green beans, 2 tsp. olive oil, 1/4 tsp. salt, lemon n herb seasoning, and a pinch of pepper in one provided tray. Massage oil and seasonings into green beans. Spread into an even layer. -
Prepare the Chicken
Coarsely crush crackers.
In a mixing bowl, combine crushed crackers and cheese. Set aside.Pat chicken dry. Season both sides with 1/4 tsp. salt and a pinch of pepper.Place chicken in second provided tray. Evenly top with creme fraiche, then cracker mixture, pressing gently to adhere. -
Bake Meal and Heat Mashed Potatoes
Bake both trays uncovered in hot oven until green beans are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.

Vigorously stir to combine.Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave.
