Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using antibiotic free chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

Roast the Fries
Peel and cut both potatoes into 1/4" fries and pat dry.
Place fries, 4 tsp. olive oil, 1/4 tsp. salt, half the piri piri seasoning (to taste; reserve remaining for after roasting), and a pinch of pepper on prepared baking sheet. Massage oil and seasonings into fries. Spread into an even layer.Roast in hot oven until lightly browned, 25-30 minutes, tossing fries halfway through.Carefully remove from oven. Add remaining piri piri seasoning (to taste) and gently toss to coat.While fries roast, continue recipe. -
Toast the Buns
Place a large non-stick pan over medium heat.
Spray cut-sides of buns with cooking spray. Working in batches if necessary, add buns, cut-side down, to hot, dry pan.Toast until lightly browned, 1-2 minutes.Transfer buns to a plate. Wipe pan clean and keep over medium heat. -
Heat Oil and Make Batter
Add canola oil to hot pan. Let oil heat, 5 minutes.
While oil heats, in a mixing bowl, combine tempura mix and 1/2 cup water until a thin batter forms, like pancake batter.If too thick, add additional cold water, 1 Tbsp. at a time, until desired consistency is reached. -
Prepare the Chicken
Pat chicken dry.
Place chicken into bowl with batter and stir until evenly coated. -
Cook Chicken and Finish Dish
Line another plate with a paper towel.
Working in batches if necessary, lay chicken in hot oil. Flip occasionally until crispy, golden-brown, and chicken reaches a minimum internal temperature of 165 degrees, 5-6 minutes.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Remove from burner and transfer chicken to towel-lined plate.Plate dish as pictured on front of card, topping bottom bun with chicken, pickles, dressing, then top bun.
