Start the Potatoes
Prick potatoes all over with a fork.
Place potatoes in a microwave-safe bowl and cover with a damp paper towel.Microwave covered until slightly tender, 4-6 minutes.Carefully remove from microwave. Transfer potatoes to one provided tray and top with 2 tsp. olive oil.Bake uncovered in hot oven until fork-tender, 25-30 minutes.While potatoes bake, continue recipe. -
Prepare the Chicken
Tear spinach.
In a mixing bowl, combine torn spinach, softened cream cheese, mayonnaise, and shredded cheese. Set aside.Pat chicken dry. Season both sides with rotisserie chicken seasoning and 1/4 tsp. salt.Place chicken in second provided tray and evenly top with spinach mixture. -
Bake Meal and Smash Potatoes
Bake uncovered in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove both trays from oven.Using the flat side of an object (like a drinking glass), press down gently to smash each potato until 1/2" thick.To serve, stir savory seasoning, garlic salt, and softened butter into potatoes until coated.
