Cooking Guidelines

If using salmon, pat dry and season flesh side with seasoning rub and a pinch of salt. Follow same instructions as chicken in Step 2, roasting until salmon reaches minimum internal temperature, 13-15 minutes.

Start the Potatoes
Cut potatoes into 1/4" wedges.
Place potato wedges on prepared baking sheet and toss with 1 Tbsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Massage oil, salt, and pepper into potatoes.Spread into a single layer on one side of prepared baking sheet. Roast in hot oven, 15 minutes.Remove from oven. Potatoes will finish cooking in a later step.While potatoes roast, prepare ingredients. -
Prepare the Ingredients
Quarter mushrooms.
Trim and thinly slice green onions on an angle, keeping white and green portions separate.Halve tomatoes.Pat chicken breasts dry, and season both sides with half the seasoning rub (reserve remaining for mushrooms), and a pinch of salt. -
Cook Chicken and Finish Potatoes
Carefully, flip potatoes. Place chicken on empty side of baking sheet.
Roast again in hot oven until potato wedges are golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.While chicken and potatoes roast, cook mushrooms. -
Cook the Mushrooms
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add mushrooms, white portions of green onions, and a pinch of salt to hot pan. Stir occasionally until mushrooms are browned, 5-7 minutes.Stir in remaining seasoning rub and remove from burner. -
Finish the Dish
Plate dish as pictured on front of card, garnishing potatoes with cheese, mushrooms, tomatoes, sour cream, and green portions of green onions. Slice chicken, if desired, and brush or drizzle with BBQ sauce. Bon appétit!
