1 Start the Meatloaves and Mashed Potatoes
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Combine ground beef, panko, ricotta, garlic salt, a pinch of salt and 1/4 tsp. pepper in a mixing bowl. Form into four equally-sized, oval-shaped loaves and place in one provided tray.Add mashed potatoes to second provided tray. Stir vigorously to combine, then spread into an even layer.Bake both trays uncovered in hot oven until meatloaves begin to brown and mashed potatoes are heated through, 8-12 minutes. -
2 Add Sauce and Peas
Combine ketchup, brown sugar, and a pinch of salt in another mixing bowl.
Carefully remove both trays from oven. Top meatloaves evenly with ketchup-brown sugar mixture.Vigorously stir shredded cheese and a pinch of salt and pepper into mashed potatoes until cheese is melted and potatoes are creamy. Push potatoes to one side.Add peas to now-empty side of tray and top with 1/4 tsp. salt and a pinch of pepper. -
3 Bake the Meal
Cover vegetable tray with foil.
Bake both trays (meatloaves uncovered, vegetables covered) in hot oven until peas are heated through and meatloaves reach a minimum internal temperature of 160 degrees, 8-12 minutes.Carefully remove both trays from oven.To serve, stir butter into peas. Bon appétit!
