Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F
Customize It Instructions

If using ground turkey, roast until meatballs reach minimum internal temperature, 17-20 minutes.

If using Impossible burger, roast until meatballs reach minimum internal temperature, 23-25 minutes.

Prepare the Cauliflower
Cut cauliflower into bite-sized pieces.
Place cauliflower on prepared baking sheet and spray with cooking spray. Top with a pinch of pepper and piri piri seasoning (use less if spice-averse). Massage cooking spray and seasonings into cauliflower and spread into an even layer on one half of sheet. -
Prepare the Zucchini
Trim ends off zucchini. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.
Line a mixing bowl with a paper towel.Grate zucchini into towel-lined bowl. Gather zucchini in paper towel and squeeze firmly to drain excess liquid. Set grated zucchini aside and discard liquid. -
Make Chipotle Crema Mixture and Add Meatballs
Finely crush crackers.
In another mixing bowl, combine half of the chipotle crema and sour cream.In another mixing bowl, combine ground beef, the remaining chipotle crema mixture (reserve remaining for garnish), pesto (use less if spice-averse), taco seasoning, crushed crackers, and grated zucchini. Let sit, 10 minutes.After 10 minutes, form mixture into 8 equally-sized meatballs.Transfer meatballs to empty half of sheet. -
Roast the Cauliflower and Meatballs
Roast in hot oven until cauliflower is tender and meatballs reach a minimum internal temperature of 160 degrees, 18-20 minutes.
Carefully remove sheet from oven and drain excess liquid. Sheet will be hot! Use caution. -
Add Cheese and Finish Dish
Evenly top meatballs with cheese.
Roast again in hot oven until cheese is melted, 1-2 minutes.Carefully remove sheet from oven. Stir butter into cauliflower until melted and combined.Plate dish as pictured on front of card, topping meatballs with remaining chipotle crema mixture. Bon appétit!
