Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Start the Filling
Remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice.
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.Add bell peppers and ground pork to hot pan. Break up meat until no pink remains, peppers are tender, and pork reaches a minimum internal temperature of 160 degrees, 5-7 minutes.Remove from burner. -
2 Finish the Filling
Drain excess liquid from pan.
Stir in softened cream cheese, 1/2 tsp. salt, chipotle pepper paste (to taste), chili powder, and 1/3 the shredded cheese (reserve remaining for sauce) until melted and combined. -
3 Assemble the Taquitos
Place tortillas on a clean work surface. Divide filling equally among tortillas, placing in center. Roll tightly and place seam-side down on prepared baking sheet.
Top taquitos with 1 Tbsp. olive oil. Gently massage oil into taquitos to coat evenly. -
4 Broil Taquitos and Make Queso
Broil taquitos under hot broiler until crispy and browned, 2-4 minutes, flipping once halfway through.
Don't text and broil! Keep an eye on oven as taquitos may burn easily under broiler.Carefully remove from broiler.In a microwave-safe bowl, combine salsa (to taste), a pinch of salt, remaining shredded cheese, paprika, and cream base. Cover with a damp paper towel.Microwave covered until cheese is melted, 1-2 minutes.Carefully remove from microwave. Vigorously stir to combine. Cover with a damp paper towel.Microwave again covered until hot and bubbling, 1-2 minutes.Carefully remove from microwave.Plate dish as pictured on front of card, serving taquitos with queso for dipping.
