Bake the Green Beans
Trim green beans, if necessary.
In one provided tray, combine green beans, 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into an even layer.Bake uncovered in hot oven until fork-tender, 35-40 minutes.While green beans bake, continue recipe. -
Form the Meatballs
In a mixing bowl, combine panko, 2 Tbsp. water, chimichurri seasoning, 1/2 tsp. salt, sour cream, and a pinch of pepper. Let sit, 1 minute.
After 1 minute, add ground beef and stir until thoroughly combined. Form beef mixture into 16 equally-sized meatballs.Place meatballs in second provided tray. -
Bake Meatballs, Heat Rice, and Finish Meal
Bake second tray uncovered in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, place diced peppers in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until peppers are slightly tender, 3-4 minutes.Carefully remove from microwave.Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Stir rice, chicken base, and a pinch of pepper into bowl with peppers.Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork.Carefully remove both trays from oven. Stir softened butter into green beans until melted and combined. Tray will be hot! Use a utensil.To serve, top meatballs with tzatziki. Bon appétit!
