Start the Chicken and Vegetables
Place carrots in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until carrots are tender, 5-6 minutes.Carefully remove from microwave.While carrots microwave, pat chicken dry and season both sides with 1/2 tsp. salt and a pinch of pepper.In one provided tray, combine microwaved carrots, mushrooms, and 2 tsp. olive oil. Top with chicken.Bake uncovered in hot oven, 10 minutes.Wipe bowl clean and reserve.While chicken and vegetables bake, continue recipe. -
Prepare Rice and Add Sauce
Carefully massage rice in bag to break up any clumps. Remove rice from packaging.
In second provided tray, combine rice, butter, and 1/2 tsp. salt. Cover tightly with foil.In reserved bowl, combine tomato sauce, minced garlic and lemon basil, and mirepoix base. Set aside.After 10 minutes, carefully remove tray from oven and drain any excess liquid.Top chicken evenly with sauce, then shredded cheese. -
Bake the Meal
Bake both trays (rice covered, chicken uncovered) in hot oven until rice is heated through and chicken reaches a minimum internal temperature of 165 degrees, 10-15 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove both trays from oven. Uncover rice and stir.To serve, top rice with vegetables and chicken. Bon appétit!
