  • Chicken 165° F |

  1. 1

    Prepare the Ingredients

Place carrots in a microwave-safe bowl and cover with a damp paper towel.

Microwave covered until slightly tender, 4-6 minutes.

While carrots microwave, finely crush crackers.

In a mixing bowl, combine ground pork, mayonnaise, crushed crackers, 2/3 the garlic salt (reserve remaining for carrots), and 1/4 tsp. pepper. Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place meatloaves in one provided tray.

Carefully remove carrots from microwave and drain any excess liquid.

Transfer carrots to second provided tray and top with 2 tsp. olive oil and remaining garlic salt. Massage oil and seasoning into carrots. Spread into an even layer.

  2. 2

    Start the Carrots and Meatloaves

Bake carrots uncovered in hot oven until tender, 30-35 minutes.

Bake meatloaves uncovered in hot oven, 10 minutes.

Carefully remove meatloaves from oven (keep carrots in oven). Evenly top meatloaves with marinara, then cheese. Tray will be hot! Use a utensil.

  3. 3

    Toast Bread and Finish Meal

    Remove garlic bread from packaging.

Place garlic bread directly on oven rack and toast in hot oven until lightly golden-brown, 10-15 minutes.

If defrosted, reduce cooking time and check for doneness sooner.

Bake meatloaves again uncovered in hot oven until pork reaches a minimum internal temperature of 160 degrees, 10-15 minutes.

Carefully remove meatloaves and bread from oven.

After 30-35 minutes, carefully remove carrots from oven. Stir honey and butter into carrots.

To serve, slice garlic bread, if desired. Bon appétit!
