1 Bake the Ground Pork Mixture
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Add ground pork, pepper & onion mix, 1/4 tsp. salt, chipotle seasoning (use less if spice-averse), and ancho cinnamon rub (use less if spice-averse) to one provided tray. Stir to combine, breaking pork into smaller pieces.Bake uncovered in hot oven until vegetables are tender and ground pork reaches a minimum internal temperature of 160 degrees, 25-30 minutes. While ground pork mixture bakes, continue recipe. -
2 Bake the Rice and Beans
Drain beans.
In second provided tray, combine rice, beans, and a pinch of salt. Cover tray with foil. Bake covered in hot oven until heated through, 8-10 minutes. -
3 Build Burritos and Finish Meal
Remove both trays from oven. Carefully drain excess liquid from pork mixture tray. Tray will be hot! Use a utensil.
Wrap tortillas in a damp paper towel and microwave until warmed, 30-60 seconds. If tortillas come folded, keep folded.Place tortillas on a clean work surface. Divide pork mixture, rice and beans, sour cream, and cheese evenly between tortillas, placing in center of each. Fold sides of tortilla toward center, then roll bottom edge towards the top, enclosing sides tightly. To serve, halve burritos diagonally, if desired. Bon appétit!
