Cooking Guidelines

Prepare the Ingredients
Preheat the oven to 400 degrees. Prepare a baking sheet with foil or use a non-stick baking sheet. Thoroughly rinse produce and pat dry. Mince garlic. Chop sage leaves. Cut potatoes into a medium dice. Slice tomato. Chop chives.

Cook the Potatoes
Warm 1 Tbsp. olive oil in a medium pan over medium heat, then add potatoes and cook for about 10-15 minutes. Season with a pinch of salt and pepper.

Make the Sausage
While the potatoes are cooking, combine the ground pork, fennel seed, sage, and a pinch of salt and pepper in a mixing bowl. Form two patties, then cook in a medium pan over medium heat [ed: does this pan need oil?] for about 3 minutes per side. Place sausages on baking sheet and finish cooking in the oven for an additional 2-3 minutes. Add a slice of cheese to each patty, and allow to melt.

Warm the Bagel and Cook Eggs
While sausage and potatoes are finishing, toast bagels to your preference either in oven or toaster. Heat 1 tsp. of olive oil in a small skillet and add garlic. Cook until fragrant, then add liquid eggs and season with a pinch of salt and pepper salt and pepper. Cook for about 4 minutes.

Plate the Dish
Add a serving of eggs to the bottom half of the bagel, then a slice of tomato. Top that off with a sausage patty, and the top half of the bagel. Place the sandwich, and a helping of potatoes. Garnish potatoes with chives, and enjoy.
