Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

Prepare the Potatoes
Cut potatoes into 1/2"-thick wedges and pat dry.
Place wedges on one prepared baking sheet and top with 2 tsp. olive oil, half the onion salt (reserve remaining for meatballs), 1/4 tsp. salt, and a pinch of pepper. Massage oil and seasonings into wedges. Spread into a single layer. -
Form the Meatballs
In a mixing bowl, combine ground pork, remaining onion salt, half the ketchup (reserve remaining for sauce), mayonnaise, and panko.
Form mixture into 16 evenly-sized meatballs and place 1" apart on one half of second prepared baking sheet. -
Add the Carrots
Place butter in a microwave-safe bowl.
Microwave uncovered until melted, 20-30 seconds.Carefully remove from microwave and stir in half the brown sugar (reserve remaining for sauce) until combined.Place carrots on empty side of second prepared baking sheet. Top with brown sugar butter, 1/4 tsp. salt, and a pinch of pepper. Toss until evenly coated and spread into an even layer on their side. Wipe bowl clean and reserve. -
Roast the Vegetables and Meatballs
Roast both baking sheets in hot oven, 20 minutes.
While vegetables and meatballs roast, continue recipe. -
Add Sauce and Finish Dish
In reserved microwave-safe bowl, combine BBQ sauce, remaining ketchup, and remaining brown sugar. Set aside.
After 20 minutes, carefully remove sheets from oven.Flip potatoes. Sheet and potatoes will be hot! Use a utensil.Top meatballs with BBQ sauce mixture. Sheet will be hot! Use a utensil.Roast both sheets again in hot oven until potatoes are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-20 minutes.Carefully remove sheets from oven.Plate dish as pictured on front of card.
