Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Ground Turkey 165° F |

    Microwave Instructions

    Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry. Drain brisket and separate slices.

    If you receive diced beef tenderloin, drain and break into smaller pieces. Tenderloin will be pink upon arrival and may remain pink after heating. It has been pre-cooked and simply needs to be heated through.

    In one section of provided tray, combine poblanos (to taste) and 1 tsp. water. Cover with a damp paper towel. Microwave covered until tender, 1-2 minutes.

    Carefully remove tray from microwave. Add corn, cheese, pesto (to taste), and a pinch of salt and pepper to poblanos. Stir to combine. In empty section of tray, combine brisket and BBQ sauce. Stir until brisket is coated. Cover tray with a damp paper towel. Microwave covered until brisket is warmed through, 2-3 minutes.

    Carefully remove tray from microwave. Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.

    If tortillas come folded, keep folded.

    While tortillas heat, stem cilantro and reserve whole leaves.

    Carefully remove tortillas from microwave.

    To serve, fill tortillas with BBQ brisket, poblano-corn mixture (to taste), and cilantro. Bon appétit!

    Oven Instructions

    Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Make sure to use conventional oven setting, not convection. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry. Drain brisket and separate slices.

    If you receive diced beef tenderloin, drain and break into smaller pieces. Tenderloin will be pink upon arrival and may remain pink after heating. It has been pre-cooked and simply needs to be heated through.

    In one section of provided tray, combine poblanos (to taste) and 1 tsp. olive oil.

    Place tray on a baking sheet. Bake uncovered in hot oven until poblanos are tender, 6-8 minutes.

    Carefully remove tray from oven. Add corn, cheese, pesto (to taste), and a pinch of salt and pepper to poblanos. Stir to combine. In empty section of tray, combine brisket and BBQ sauce. Stir until brisket is coated. Cover tray with foil.

    Place tray on a baking sheet. Bake again covered in hot oven until heated through, 10-12 minutes.

    While meal bakes, wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.

    If tortillas come folded, keep folded.

    Stem cilantro and reserve whole leaves. Carefully remove tray from oven and tortillas from microwave.

    To serve, fill tortillas with BBQ brisket, poblano-corn mixture (to taste), and cilantro. Bon appétit!
