Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Start the Spinach and Potatoes
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided tray generously with cooking spray.
Mince garlic.Combine spinach, half the garlic (reserve remaining for topping), a pinch of salt, and 1 tsp. olive oil in tray. Push to one side.Add potatoes (no need to drain) to empty side of tray. Stir vigorously.Bake uncovered in hot oven, 10 minutes.While spinach and potatoes bake, continue recipe. -
2 Sear the Salmon
Pat salmon dry, and season flesh side with 1/4 tsp. salt and a pinch of pepper.
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.Add salmon, skin side up, to hot pan and sear until golden brown on one side, 1-2 minutes.Remove from burner. Carefully remove tray from oven. Stir spinach and potatoes to combine, then push to one side. Top with remaining garlic and garlic salt. Tray will be hot! Use a utensil.Transfer salmon, skin side down, to now-empty side of tray. Top with hot honey (use less if spice-averse) and cheese. -
3 Bake the Meal
Bake uncovered in hot oven until potatoes are warmed through and salmon reaches a minimum internal temperature of 145 degrees, 10-12 minutes.
While meal bakes, stem dill.Halve lemon.Carefully remove tray from oven. Vigorously stir potatoes.To serve, top salmon with dill and squeeze lemon halves over to taste. Bon appétit!
