Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using filets mignon or sirloin, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Start the Mashed Potatoes
Cut potatoes into large evenly-sized chunks.
Bring a medium pot with potato chunks covered by water to a boil.Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Reserve 1/2 cup potato cooking water. Drain potatoes in a colander and return to pot.While potatoes cook, continue recipe. -
2 Prepare the Green Onions
Trim and thinly slice green onions.

3 Roast the Chicken
Pat chicken dry. Top with 1 tsp. olive oil and season both sides with a pinch of salt and pepper.
Combine panko, Buffalo sauce (to taste; reserve 1 tsp. for crema), and cheese in a mixing bowl. Place chicken on prepared baking sheet. Top chicken with panko mixture (use less if spice-averse), pressing gently to adhere.Roast in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.While chicken roasts, continue recipe. -
4 Finish the Mashed Potatoes
Add 2/3 the sour cream (reserve remaining for crema), butter, buttermilk-dil seasoning, a pinch of salt and pepper, and 2 Tbsp. reserved potato cooking water to pot with potatoes.
Mash until combined and smooth. If too thick, add additional reserved potato cooking water, 1 Tbsp. at a time, until desired consistency is reached. -
5 Make Crema and Finish Dish
In another mixing bowl, combine remaining sour cream, remaining Buffalo sauce (to taste), and 1 tsp. water. Set aside.
Plate dish as pictured on front of card, topping chicken with crema (to taste) and garnishing mashed potatoes with green onions. Bon appétit!
