Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Prepare the Chicken and Rice
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Pat chicken breasts dry.In one provided tray, combine rice, diced peppers, corn, enchilada sauce, adobo seasoning, 1/4 tsp. salt, and 11/2 cups water.In second provided tray, combine chicken, 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into an even layer. -
2 Start Chicken and Rice and Add Cheese
Bake both trays uncovered in hot oven until diced peppers are tender and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.
Carefully remove trays from oven.Drain any excess liquid from tray with chicken. Evenly divide chicken and rice between both trays and stir to combine. Spread into an even layer. Top both trays evenly with cheese Tray will be hot! Use a utensil. -
3 Bake Meal and Make Crema
Bake both trays again uncovered in hot oven until cheese is melted, 5-6 minutes.
While meal bakes, halve lime. Cut one half into wedges and juice the other half.In a mixing bowl, combine sour cream and 1 Tbsp. lime juice.Carefully remove both trays from oven.To serve, top chicken and rice with crema and tortilla strips. Bon appétit!
