If using ground pork, follow same instructions as ground turkey in Steps 2 and 3, baking uncovered in hot oven until pork reaches minimum internal temperature, 28-32 minutes.

If using ground beef, follow same instructions as ground turkey in Steps 2 and 3, baking uncovered in hot oven until pork reaches minimum internal temperature, 25-28 minutes.

If using Impossible burger, follow same instructions as ground turkey in Steps 2 and 3, baking uncovered in hot oven until burger is heated through, 25-28 minutes.

Prepare the Ingredients
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Break broccoli into bite-sized pieces.Combine broccoli, red bell pepper, 2 tsp. olive oil, half the garlic salt (reserve remaining for meatloaves), and a pinch of salt and pepper in provided tray. Spread into a single layer. Cover with foil.Bake covered in hot oven, 5 minutes. -
Add the Meatloaves
Carefully, remove tray from oven and remove foil. Push vegetables to one side. Tray will be hot! Use a utensil!
Combine turkey, panko, half the sour cream (reserve remaining for sauce), remaining garlic salt, and a pinch of salt and pepper in a mixing bowl.Form turkey mixture into two meatloaves and place in empty half of tray. -
Bake the Dish
Bake again uncovered until vegetables are tender and meatloaves reach a minimum internal temperature of 165 degrees, 30-32 minutes.
In another mixing bowl, combine remaining sour cream and pesto.Carefully remove tray from oven. Garnish meatloaves with sour cream-pesto and top broccoli with cheese. Bon appétit!
