A note about serious food allergies

Apples and pork just go together; their love is pure, complete, and goes great with sweet potatoes. Hey, sometimes three's not a crowd, but the charm, and that apple cider sauce that enrobes the pork also goes great with the tater fries. Apple and pork have the love, but so will you and this meal as soon as you take the first bite. Tip: Having trouble cutting that wobbly sweet potato? Trim off 1/4" along its length. Turn sweet potato onto its flat side. You now have a flat base to work from while you cut the remaining sweet potato.

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using chicken breasts, follow same instructions as pork chops in Steps 2 and 3, cooking until chicken reaches minimum internal temperature, 5-7 minutes per side.

  • If using ahi tuna, follow same instructions as pork chops in Steps 2 and 3, cooking until tuna reaches a minimum internal temperature of 145 degrees, 4-5 minutes per side. Tuna is often enjoyed medium-rare (pink in the middle). For medium-rare, cook 1-2 minutes per side. Consuming raw or undercooked tuna may increase your risk for food-borne illness.

  • If using NY strip steak, follow same instructions as pork chops in Steps 2 and 3, cooking until steaks reach minimum internal temperature, 7-10 minutes per side. Rest, 3 minutes.

  • If using salmon, follow same instructions as pork chops in Steps 2 and 3, cooking, skin-side up first, until salmon reaches minimum internal temperature, 4-6 minutes per side.

  1. 1

    Bake the Sweet Potato Fries

Cut sweet potato into 1/2"-thick fries.

Place sweet potato fries on prepared baking sheet and toss with 2 tsp. olive oil and a pinch of salt.

Spread into a single layer. Bake in hot oven until browned and tender, 25-30 minutes, flipping once halfway through.

Toss baked fries with seasoning blend. Sheet will be hot! Use a utensil.

While fries roast, prepare remaining ingredients.

  2. 2

    Prepare the Ingredients

    Quarter butter.

    Stem and mince rosemary.

    Peel and mince shallot.

Pat pork chops dry, and season both sides with a pinch of salt and pepper.

  3. 3

    Cook the Pork Chops

Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.

Add pork chops to hot pan. Cook until golden-brown and chops reach a minimum internal temperature of 145 degrees, 3-5 minutes per side.

Pork thickness can vary; if you receive a thinner chop, we recommend checking for doneness sooner.

Remove from burner. Remove pork chops to a plate and rest, 3 minutes.

Reserve pan; no need to wipe clean.

  4. 4

    Make the Sauce

Return pan used to cook pork chops to medium heat and add 1 tsp. olive oil.

Add shallot to hot pan. Stir often until softened, 4-5 minutes.

Stir in apple cider, hot honey, mustard, and demi-glace until combined. Bring to a simmer.

Once simmering, stir occasionally until liquid is reduced by half, 1-2 minutes.

Stir in butter, one quarter at a time, until melted and combined. Add rosemary (to taste). Remove from burner.

  5. 5

    Finish the Dish

Plate dish as pictured on front of card, topping pork chops with sauce. Bon appétit!
