Microwave Instructions
Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry. Drain chicken and pat dry.
Pierce tomatoes with a fork all over (If you receive a whole tomato, cut into 1/2" dice). Place in one section of provided tray and combine with 1 tsp. olive oil, rice, demi-glace, and a pinch of salt and pepper.In empty section, combine spinach, chicken, 1 tsp. olive oil, and a pinch of salt and pepper.Cover rice section of tray with a damp paper towel.Microwave half covered (rice covered, chicken uncovered) until tomatoes soften, spinach wilts, and chicken is heated through, 4-5 minutes.Carefully remove tray from microwave. Stir butter (to taste) into rice section of tray, pressing tomatoes gently to release juices. Tray will be hot! Use a utensil.To serve, top rice with chicken-spinach mixture and garnish with cheese. Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Make sure to use conventional oven setting, not convection.
